Dried or fresh thyme½ teaspoon or 2 fresh sprigs

Instructions

  1. Pat the beef slices dry with paper towels. Season them generously with salt and freshly ground black pepper.
  2. In a large, heavy-bottomed skillet over medium-high heat, heat the vegetable oil and butter until the butter is melted and lightly bubbling.
  3. Add the beef slices to the skillet (avoid overcrowding; you may need to cook the beef in batches). Sear the beef quickly on both sides until browned (about 2-3 minutes per side) but not fully cooked through. Remove the beef from the skillet and set aside.

  10. Return the seared beef slices to the skillet and stir to coat them with the sauce. Reduce the heat to low, cover the skillet, and let the beef simmer in the sauce for another 5-10 minutes or until the beef is cooked through and very tender.
  11. Season the sauce with salt and black pepper to taste. Adjust the seasonings if needed.
